Using Spices and Blends for Flavor
– We’ll use whole spices like mustard, cloves, and curry leaves in our blends like Sundays in Malabar, Masala-Tov and Grandma’s Gold for warmth and flavor in the winter. I’ll show you how to make a spicy coconut Malabari curry with spaghetti squash; we’ll transform a simple tomato stew into a flavor bomb hand pie with our celebratory blend Masala-Tov; and mellow out the evening with curative Grandma’s Gold inspired by Ayurveda and my Mum. Menu: Sour Ingredients in Indian Cooking with Spice Heat; Using Tamarind, Aamchoor, & Kokum

There are so many mouth-puckering flavors in an Indian kitchen. And as we all know, the final kiss of that lemon juice and a sprinkle of cayenne is what makes a recipe sing. Join me and my friend – hot sauce guru, Barry Shannon of Barry’s Hot Sauce for a tasty hour. We will explore the use of all things sour and hot that not only bring flavor into your winter kitchen but also help activate digestion and have many values rooted in Ayurveda.

I’ll use souring elements like kokum (garcinia) flowers, aamchoor, and tamarind most commonly used in an Indian kitchen in recipes like a spicy garlic rasam, Amritsari channa, and the quintessential tamarind chutney. I’ll build heat using Barry’s sauces, and you can find out how a side hustle between slinging cocktails at a Boston bar fast became the secret ‘sauce’ for Barry.

During class, I’ll teach you how to make a classic ‘mother sauce’ which is ideal for batch cooking and freezes well. Then learn how to transform the sauce into three, distinct dishes — rich Paneer Tikka Masala, creamy vegan Cajù Korma, and a rustic version of Kadai — each a worthy centerpiece for a cozy meal. As a bonus, I will also share my recipes and techniques for making homemade naan and paneer!

Join me for a spice and herb primer where we’ll explore the use of nature’s gifts to bring flavor and soothe the heat this summer. Spices and herbs play such a huge role in bringing balance to our body through the foods that are seasonal and local. I’ll teach you how to make a spice rub that’ll liven your summer cooking and bring the heat to your palette which supports your body through the hot months ahead. The blend is inspired by the arid regions of India in Rajasthan and Maharashtra that are popular for their chili peppers and are ingrained in the regional cuisine. I’ll also talk about herbs that we use in an Indian kitchen that help cool our systems using what’s in season and growing locally in the region.

Joining me this month is my good friend and botanical alchemist, Jenny Hauf of Muddy River Herbals. Jenny combines her deep knowledge of healing plants with the plants she grows and gathers on her farm to create beautiful salves, tinctures, and shrubs. In this class, she will teach us how to make a deliciously cooling cocktail (which can also be prepared without alcohol), and will also share tips on how we can use herbs to stay comfortable and hydrated throughout the summer months.

Attendees will receive the recipes after class and a free sample of the unique spices used in the blend for your experiments at home this summer. Zoom link and samples will be sent to the email and mailing address submitted during registration.

Ready to shake off winter and wake up your palate? Join me for another class with my friends and founder Claire Cheney of Curio Spice Co. This time I’ll introduce you to the wonders of Indian street food AT HOME and allow your tastebuds to travel in a lively and delightful way! Learn how you can make some simple dishes at home with the addictive and fresh flavors that are unique to the Indian palate! One of the key flavors we’ll dive into is the lip-smacking and crave-worthy chaat masala, a sour, salty, chile-spiked blend that is the magic dust of Indian street food vendors. It’s also used in Indian homes where it’s liberally sprinkled on treats from snow-cones and fresh fruit as well as fried snacks, salads, and vegetable sides.

I will introduce you to the blend’s signature ingredients, including kala namak or ‘black salt’ with its distinctly funky flavor. Learn how to make my mother’s lentil fritters with a date chutney— finished with chaat masala, of course! And, I will share my sister’s recipe for refreshing sweet-tart rhubarb sherbet, a beverage (not unlike a spiced pink lemonade) that’s served ice cold with a pinch of chaat-masala.

Because I love to incorporate Indian flavors when cooking American favorites, I will also share ideas for adding chaat masala to your everyday cooking and grilling repertoire. You are bound to come away with some new insights into your home cooking and some new tools to make your spring and summer cooking pop with flavor. After the class, you will receive the recipes, a quick guide to building your Indian spice pantry, a list of some Indian cookbooks that I recommend, and a link to a video of the class. In this class, I’ll share with you my recipe for making a vegan mole sauce from scratch using a blend I created especially for this class. The ‘meat’ will comprise of lion’s mane mushrooms and navy beans, stuffed into roasted poblanos served family-style. When you sign up for class, you can choose to just take the virtual class, or sign up for the class + dry kit ingredients + shipping and cook along with some pre-prep. Lion’s mane mushrooms have so many nutrient properties and when cooked in the mole base, they mimic the long strand texture reminiscent of meat. In this class, I’ll introduce you to making Indian flatbreads at home. What better time than a quiet January to expand your bread-making repertoire? In India, flatbreads are considered essential to a satisfying meal — especially because they’re often used in place of cutlery and are the perfect complement to saucy curries and stews. In this class, I will show you how to make two types of unleavened flatbread: roti and stuffed parathas. Made with whole-grain flour these are simple and pure, you can taste the nuttiness of the grain used to make them. You’ll learn to make and roll the dough and what to watch for as you cook them to get good results. We will also share make Mummy’s tomato chutney using the Panch Phoran, a blend of whole spices that’s used to make it. After the class, Curio’s team will send you the recipes, a quick guide to building your Indian spice pantry, a list of some Indian cookbooks that I will recommend, and a link to a video of the class. You’ll also receive a sample of their house toasted and ground cumin.

Join me in collaboration with Claire of Curio Spice Co., to learn all about dal, the cozy and hearty lentil soup served at almost every Indian table, and one you’ll soon want on your table on regular rotation. If you’ve been eager to explore Indian flavors in your own kitchen but haven’t known where to start, this is the class for you. I will give you a regional overview of dal styles, share techniques for layering flavors, including how to temper spices in oils (also known as tarka or chhonk) as a method to build rich flavor in this humble dish. And also teach you my fool-proof technique for making perfect, toothsome, basmati rice. Every time. I will demonstrate making my mother and sister’s regional Gujarati dal served with delicately spiced rice and will also introduce you to two other dals (and the best tempering oils to use with them). Plus, you’ll get her recipe for the creamiest payasam ever, a classic spiced pudding that can be made from any left-over cooked rice. After the class, you will receive all the recipes, a quick guide to building your Indian spice pantry, and a list of Indian cookbooks that I’ll recommend. Spice up your Summer with Samosas! If you’ve taken one of Curio’s classes before, you know you’re in for a treat. If you haven’t, I’m excited to be doing a virtual class with Founder, Claire as we talk spices and some cheat recipes for quick summer treats. The most immediate way to any memory is through food. Being a curious cook, after years in Boston it’s no surprise that I have incorporated many of my nostalgic flavors while using what new flavors and farm-fresh produce is available to me. I will demonstrate making two vegetarian dishes: summer-in-New-England samosas and curried corn chowder. I’ll share tips and tricks for working with Indian spices and for layering in flavors, along the way. You’ll get acquainted with short-cuts and techniques that Indian cooks use to streamline weekday cooking. We will feature my family’s garam masala* – the star and workhorse of Indian spice blends – in several of the recipes. While most Indian home cooks use pressure cookers, this tool is not as common in American kitchens. I will demonstrate how to make one of my favorite curries using the Instant Pot™ (a trendy new pressure/slow cooker), and you’ll be thrilled to discover how weeknight meals that burst with flavor come together more easily.
