Tomato Chutney

Tomato Chutney – A Bright, Sweet & Tart Relish

This tomato relish is tart and sweet, lightly spiced and the perfect accompaniment for stuffed squash blossoms, on a cheese board or in a gooey warm grilled cheese sandwich.

The spice blend, Masala-Tov makes seasonal tomatoes come alive, it was created as a bespoke blend for a beautiful couple’s Indian/Jewish wedding favor. It blends the cultures and flavors together telling a story of their heritages and regional cuisines in a jar.

Makes Approx. 2 cups | Prep Time: 15 minutes | Cook Time 25-30 minutes

Ingredients:

  • 4-5 medium tomatoes diced, with juices
  • 2 teaspoon extra virgin olive oil
  • 2 cloves of garlic, minced
  • 2 tsp. Masala-Tov blend
  • 3-4 tsp. jaggery or brown sugar

  • Salt to taste
  1. Heat a thick-bottomed pan over medium heat with the oil, when hot, add the garlic and stir for 30-40 seconds.
  2. Add the chopped tomatoes, stir-fry for 3-4 minutes on medium-low heat.
  3. Add the spice blend and salt to taste. Cover, and let the tomatoes stew for about 10 minutes, stirring occasionally.
  4. Next, add the jaggery or brown sugar, and cook down without the covering.
  5. The tomatoes will reduce by a fourth into a chutney consistency. You could also cook down further into a jam like state if you prefer.
  6. Turn off the heat, serve with warm grilled breads, fried tempuras, in warm grilled cheese sandwiches.
