Tomato Chutney – A Bright, Sweet & Tart Relish
This tomato relish is tart and sweet, lightly spiced and the perfect accompaniment for stuffed squash blossoms, on a cheese board or in a gooey warm grilled cheese sandwich.
The spice blend, Masala-Tov makes seasonal tomatoes come alive, it was created as a bespoke blend for a beautiful couple’s Indian/Jewish wedding favor. It blends the cultures and flavors together telling a story of their heritages and regional cuisines in a jar.
Makes Approx. 2 cups | Prep Time: 15 minutes | Cook Time 25-30 minutes
Ingredients:
- 4-5 medium tomatoes diced, with juices
- 2 teaspoon extra virgin olive oil
- 2 cloves of garlic, minced
- 2 tsp. Masala-Tov blend
- 3-4 tsp. jaggery or brown sugar
- Salt to taste
- Heat a thick-bottomed pan over medium heat with the oil, when hot, add the garlic and stir for 30-40 seconds.
- Add the chopped tomatoes, stir-fry for 3-4 minutes on medium-low heat.
- Add the spice blend and salt to taste. Cover, and let the tomatoes stew for about 10 minutes, stirring occasionally.
- Next, add the jaggery or brown sugar, and cook down without the covering.
- The tomatoes will reduce by a fourth into a chutney consistency. You could also cook down further into a jam like state if you prefer.
- Turn off the heat, serve with warm grilled breads, fried tempuras, in warm grilled cheese sandwiches.
